Coastal Cheddar is matured at the Ford Farm Dairy located on the world heritage Jurassic Coast line in the salty sea air. Coastal Cheddar has a rich, rugged and mature cheddar flavour. Aged on the Dorset Coast, Coastal is often characterised with a distinctive crunch; a result of the calcium lactate crystals which form naturally in the Cheese as it matures. Coastal Cheddar is aged for up to fifteen months which bestows it with its rich and intense flavour but the culture used also adds a contrasting subtle, sweet, top note. Pair with a traditional Dorset Cider or with a glass of Chateau La Bastide Corbieres from the Languedoc, France.
