Lamb and turkey do occasionally enjoy some time in the sun, but porky mince remains somewhat overlooked. While there are many reasons to embrace this unsung hero – pork mince is delicious, generally lean and cheaper than its aforementioned meaty counterparts – the most common factor in holding people back is simply not knowing quite what to do with it. Fortunately, this collection of pork mince recipes contains plenty of inspiration for cooking with this fantastic ingredient.Meatballs with tomato sauceITALIAN MEATBALLS AND TOMATO SAUCE100g of breadcrumbs, slightly stale250ml of milk350g Minced Meat (a mixture of Pork & Beef Mince say 50/502 Eggs Beaten2 tbsp of flat-leaf parsley, finely chopped1 garlic clove, crushed3 tbsp of pecorino, grated (ideally Pecorino Toscana cheese)30g Parmesan Grated3 tbsp of extra virgin olive oil1 small onion, finely chopped125ml of dry white wine          300g Tinned Chopped TomatoesSalt & PepperMethod1 To begin, place the breadcrumbs and milk in a bowl and leave to soak for 10 minutes. After this time, remove the bread and squeeze out any excess liquid2 In a large bowl, combine the mince, half of the parsley, the garlic, cheeses and eggs, mixing well with your hands. Season with salt and pepper, add the soaked breadcrumbs and mix well3 Using your hands, shape the mixture into round meatballs, each about 2cm in diameter4 Add the oil to a large frying pan and place over a medium heat. Once hot, add the onion and sweat for 2–3 minutes until soft but without colour. Add the meatballs to the pan and fry for 5–6 minutes, turning often until evenly coloured on all sides5 Add the wine to the pan and cook down until it has entirely evaporated. Pour in the tinned tomatoes and simmer for 20–25 minutes – after this time the meatballs will be cooked through and the sauce will have thickened nicely.Porky or Beef MinceSprinkle with the reserved parsley and servepork mince pastaeasy pork mince recipespork mince and noodlesPork – N&C Produce (ncmeatfishproduce.co.uk)pork or beef mince
