Description THE CHOCOLATE: Fernglen Farm is a sheep milk farming family neighboring Lucid’s production site. They have been producing premium sheep milk for years, and they have been testing chocolate with it since our inception. Cameron, who pioneered their move to sheep milking from conventional farming, has been friends with Johnty since youth. This bar is a tribute to locality and friendship, through the medium of soft and creamy sheep milk. HISTORY: Fernglen Farm are a passionate farming family from the Wairarapa, situated just a few kilometers from the Lucid Chocolatier kitchen. In 2015, they began their mission to convert from a conventional sheep and beef farm to one with a focus on producing world class sheep milk. It is a true family run operation, with each of the parents and children working hard day in day out to keep the wheels turning. Their milk was the first in New Zealand to be awarded the SPCA animal welfare certification, and the quality of it has become well known across the country, earning a plethora of awards since they began. Throughout the year, the flavor of the milk changes with the diet of the sheep, and they generally find the flavor to be incredibly soft and creamy with a subtle sweetness. It has always been a product they’ve desired to work with, it just took a long time for them to figure out how to go from fresh milk to a shelf stable powder suitable for chocolate. This bar is also the story of friendship, with Cameron from Fernglen and Johnty from Lucid being friends since birth, growing up together out in the country and still being great friends to this day, perfectly complementing the flavor profile of the milk. 1.8 oz
