Description THE CHOCOLATE: The elusive Mulberry. It is the epitome of a flavor berry with potency in droves and being unrivaled in sharpness & sweetness. Like blackberry but harvested from a tree instead of a vine, the Mulberry was once widely cultivated by most ancient civilizations. Hosting delicious berries, a large canopy to provide shade and leaves that could feed livestock, the trees were a popular choice in times of old. Today, mulberries aren’t commercially grown in New Zealand. We harvest ours carefully over January and early February from our family tree, which is over 100 years old. Then, their friends at FoodNerdit Wellington delicately freeze-dry them and add to the chocolate during conching. Boasting a sharp flavor, they pierce through the chocolate engulfed in sweetness and acidity. 1.8 oz
