Goat Diced on Bone 1kgServe with a salad or crisp roast potatoesIngredients2.5kg diced kid goat on the bone, (see notes below)6 tbsp extra-virgin olive oil4 choricero peppers, (see notes below)4 cloves garlic1 tbsp sweet smoked paprika500ml oloroso sherry750ml chicken stock2 bay leavesMethodSTEP 1Season the goat meat all over. Heat the olive oil in a large, lidded casserole over a medium-high heat, and brown the meat all over in batches, scooping out as you go.Tip in the peppers and fry until browned.STEP 2Use a pestle and mortar to pound the peppers and garlic cloves to a paste, adding 1 tbsp of hot water if it’s a little dry.Add the paprika then mix in some of the sherry to loosen.Pour the mixture with the remaining sherry into the casserole and simmer for 5 minutes to evaporate the alcohol.Add the stock and bay leaves followed by the goat.Bring to the boil then turn down the heat to a gentle simmer and put on the lid. Simmer very gently for 1½-2 hours or until the goat is meltingly tender.Easy to make Goat Curry RecipeThis cut of goat comes from an adult goat leg and is diced diced on the bone to give one of the leanest and tastiest cuts of goat meat. It is full of flavour and therefore brilliant for traditional Caribbean style curries, stews and casseroles. A 1kg bag of goat leg diced on the bone will serve approximately 4-5 people.Goat Diced on the BoneEasy to make Goat Curry RecipeOur easy to make goat curry recipe is becoming real favourite at our table.With goat meat becoming increasingly popular with its deep rich flavour we will be experimenting to find new recipes so keep an eye out.Ingredients1kg Diced Goat Meat on the Bone400g chopped tomatoes (tinned)400g kidney beans (tinned)1 large onion (chopped)1 whole head of garlicMethodIn a food processor whizz up the onion, garlic and ginger to a paste.Add the oil to a large heated casserole dish, once hot add the onion, garlic ginger paste and cook until soft (about 5 mins), now add the chopped chillies, the curry powder, and the salt.
